Beef Short Rib Crock Pot Experiment

Shawn hates all things cooked in the crock pot; however, I am determined to make something he will enjoy.  Today's challenge....beef short ribs.



Our Family Day Dinner menu included:

Beef Short Rib
Prep Time: 20 mins
Cook Time: 8 hours

For this recipe you need:
  • 1⁄3 cup flour
  • 1 tsp salt
  • 1⁄4 tsp pepper
  • 2 1⁄2 lb boneless beef short ribs
  • 1⁄4 cup butter
  • 1 cup scallions, chopped
  • 1 cup beef broth
  • 3⁄4 cup red wine vinegar
  • 3⁄4 cup brown sugar
  • 3-4 shakes hot sauce
  • 1/4 cup ketchup
  • 2 tbsp Worcestershire sauce
  • 2 tbsp garlic, minced
  • 1 tsp chili powder
Directions:
  1. Put flour, salt and pepper in a bag
  2. Add ribs and shake to coat
  3. Brown ribs in butter in a large skillet
  4. Put in slow cooker
  5. In same skillet, combine remaining ingredients
  6. Bring to a boil, stirring
  7. Pour over ribs
  8. Cover and cook on low for 8 hours

Heirloom Carrots & Asparagus
Prep Time: 10 mins
Cook Time: 25 mins

For this recipe you need:
  • 8 heirloom carrots (portion depending on servings), peeled
  • 10 asparagus spears, ends trimmed
  • 2 tables spoons olive oil
  • Sea salt
Directions:
  1. Preheat oven to 400 °F
  2. Arrange carrots in baking pan and drizzle olive oil on top
  3. Sprinkle with sea salt
  4. Bake for 10 mins
  5. Add asparagus and stir to coat asparagus with olive oil and salt
  6. Bake 15 more mins
  7. Serve immediately
Make 4 servings.

Smashed Potatoes
Prep Time: 5 mins
Cook Time: 30 mins

For this recipe you need:
  • 1-2 pounds mini potatoes (cut in half)
  • 3 tablespoons unsalted butter
  • Salt
  • 1 minced garlic clove
  • 1-2 tablespoons minced chives
Directions:
  1. Put the potatoes in a medium pot and cover with water
  2. Simmer for about 30 minutes or until potatoes are tender
  3. Drain potatoes
  4. Use a potato masher to smash each potato (don't go too crazy, gently smash each one)
  5. Toss with the garlic and butter
  6. Add salt to taste
  7. Sprinkle chives on the potatoes to serve
Makes 4 servings.

These short ribs were very flavourful, moist and delicious. I don't think Shawn wanted to admit that they were good. Remember...everything cooked in a crock pot = bad! But he did have seconds and leftovers, so it couldn't be that terrible. I would definitely recommend this tasty meal.
