Our Family Day Dinner menu included:
Beef Short Rib
Prep Time: 20 mins
Cook Time: 8 hours
For this recipe you need:
- 1⁄3 cup flour
- 1 tsp salt
- 1⁄4 tsp pepper
- 2 1⁄2 lb boneless beef short ribs
- 1⁄4 cup butter
- 1 cup scallions, chopped
- 1 cup beef broth
- 3⁄4 cup red wine vinegar
- 3⁄4 cup brown sugar
- 3-4 shakes hot sauce
- 1/4 cup ketchup
- 2 tbsp Worcestershire sauce
- 2 tbsp garlic, minced
- 1 tsp chili powder
- Put flour, salt and pepper in a bag
- Add ribs and shake to coat
- Brown ribs in butter in a large skillet
- Put in slow cooker
- In same skillet, combine remaining ingredients
- Bring to a boil, stirring
- Pour over ribs
- Cover and cook on low for 8 hours

Heirloom Carrots & Asparagus
Prep Time: 10 mins
Cook Time: 25 mins
For this recipe you need:
- 8 heirloom carrots (portion depending on servings), peeled
- 10 asparagus spears, ends trimmed
- 2 tables spoons olive oil
- Sea salt
- Preheat oven to 400 °F
- Arrange carrots in baking pan and drizzle olive oil on top
- Sprinkle with sea salt
- Bake for 10 mins
- Add asparagus and stir to coat asparagus with olive oil and salt
- Bake 15 more mins
- Serve immediately

Smashed Potatoes
Prep Time: 5 mins
Cook Time: 30 mins
For this recipe you need:
- 1-2 pounds mini potatoes (cut in half)
- 3 tablespoons unsalted butter
- Salt
- 1 minced garlic clove
- 1-2 tablespoons minced chives
- Put the potatoes in a medium pot and cover with water
- Simmer for about 30 minutes or until potatoes are tender
- Drain potatoes
- Use a potato masher to smash each potato (don't go too crazy, gently smash each one)
- Toss with the garlic and butter
- Add salt to taste
- Sprinkle chives on the potatoes to serve
