Old man winter messed with our dinner plans! Oh well...Happy 10th Anniversary!

Today is our 10th Wedding Anniversary and we had planned to do a roast on the BBQ.  BUT....as I indicated in my last post, today is -40 °C (with the wind chill).  So we switched up the weekend menu order and tonight it is time for some good old comfort food.

On the menu:

Fresh Homemade Garlic Bread
Prep Time: 40 mins
Cook Time: 15 - 20 mins

For this recipe you need:
  • 1 1/2 cups warm water
  • 1 1/2 teaspoons (2 packages) dry yeast
  • 2 teaspoons sugar
  • 3 1/4 cups flour
  • 2 teaspoons salt
  • 1 egg beaten
Directions:
  1. Warm the bowl that you will be using with hot water and then discard the water
  2. Add the warm water, the yeast and sugar in the (now warmed) mixing bowl
  3. Let it sit for about 5 minutes – foam should form on the top
  4. Add flour and salt
  5. Mix until the dough becomes a smooth ball and knead for 5 minutes. I used my Kitchen Aid with the dough hook
  6. Cut dough in half and shape into 2 baguettes
  7. To make them smooth and pretty, roll each half of dough into rectangle and roll up lengthwise
  8. Pinch the edges to seal and place on lightly greased baking pan with seam down (I used parchment paper rather than grease)
  9. Cover and let it rise for 30 minutes
  10. Preheat oven to 450 °F
  11. With a very sharp knife (with a serrated blade) gently make a slash down the length of each baguette.
  12. Brush the egg evenly onto each baguette
  13. Pour water in a cookie sheet and place it on the bottom rack of the oven
  14. Bake the bread for 15 minutes
Makes 2 baguettes.

Spaghetti and Meat Sauce
Prep Time: 15 mins
Cook Time: 6 hours

For this recipe you need:
  • 1 green pepper, chopped
  • 1 yellow or orange pepper, chopped
  • 2 cups of sliced mushrooms
  • 1 medium chopped onion
  • 2 cans of diced tomatoes
  • 1 cans of tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoons salt
  • 2 tablespoons pepper
  • 2 tablespoons chilli powder
  • 2 tablespoons of Italian seasoning
  • 1 tablespoon olive oil
  • 2 lbs ground beef
  • Desired pasta
Directions:
  1. Sauté the mushrooms with olive oil and Worcestershire sauce until tender
  2. Add peppers and onions and cook until tender
  3. Brown ground beef
  4. Add all ingredients to crock pot, stir well and cook on high for 6 hours
  5. Prepare pasta according to the packing and top with meat sauce
Makes 8 servings.

As with last night, we paired ice wine with the creme brûlée.

Everything was delicious and if I recall correctly, better than my wedding dinner which consisted of pizza and french fries.
