Comeback Meal!

After our debacle two weeks ago, we needed a tried and tested dinner for our COMEBACK MEAL!

On the menu:
It tasted way better than it looks, but that is part of this blog...to improve my photos.

Prep Time: 30 mins
Cook Time: 20 mins

For this recipe you need:
  • 1 medium ribeye
  • 1 tablespoon steak seasoning
Directions:
  1. Season steak and bring to room temperature for at least 30 minutes before grilling
  2. Grill to desired internal temperature 135 - 140 °F for rare - medium rare
  3. Serve immediately
Makes 2 servings (steak is cut in half once grilled).

Cook Time: 45 mins

For this recipe you need:
  • 2 medium-large (but not gigantic) sweet potatoes (peeled and slice very tin)
  • 1 small onion (slice very thin)
  • 3 tablespoons butter (melted)
  • 3 tablespoons olive oil
  • 1 teaspoon red pepper flakes
  • 1 teaspoon dired parsley
  • Salt and pepper
Directions:
  1. Preheat oven to 350 °F
  2. Combine butter, olive oil, red pepper flakes, dried parsley, salt and pepper and lightly brush a small casserole dish with mixture
  3. Add sweet potatoes and onions (in an upright fashion --- see pic below)
  4. Lightly brush sweet potatoes and onions with mixture
  5. Bake for approximately 45 minutes or until tender
Makes 4 servings.

Sweet Potato Bake
Prep Time: 5 mins
Cook Time: 15 mins

For this recipe you need:
  • 1 bunch of asparagus (washed and ends snapped off)
  • 5 strips of cooked and chopped bacon
  • 2 tablespoons olive oil
  • Salt
  • 2 tablespoons Balsamic vinegar
  • 1/4 cup parmesan cheese (flakes or shredded)
Directions:
  1. Preheat oven to 375 °F
  2. Place asparagus in a baking dish and top with bacon
  3. Season lightly with salt and drizzle with olive oil (not a lot)
  4. Bake for approximately 15 minutes or until tender
  5. Remove from oven, drizzle with balsamic vinegar (not a lot) and sprinkle with parmesan cheese
  6. Serve immediately
Makes 4 servings.

When travelling to Slovenia in June 2014, we discovered a delicious red wine Edi Simcic Duet Lex.  However, with no known importers in Canada (according to the vineyard), we had given up hope.  But luckily I have some good connections and after 3 months, our wine arrive by boat at our door step from Slovenia!  On a side note, Slovenia is a great little country.  You only need a few days to discover its beauty!

Considering wine in Slovenia is super cheap...this is an exception.  We paid $70 (euros) for a bottle at a restaurant when in Slovenia.  Most wine is $1.50 (euros) a glass.  To have it imported and delivered to our door step was ~$58 per bottle.

It is a dry red comprised of Merlot (80%), Cabernet Sauvignon (10%), Cabernet Franc (10%).

It is described as having an intensive ruby red colour with black currant, fine tobacco, liquorice and intense spicy notes.  It was as great as we remembered it!
