Homemade Caesar Salad

It is Saturday night...what's for dinner?  Pizza and homemade caesar salad....

We had pizza a couple of weeks ago, so I won't go into that again.  However, we had some friends over, so we could just serve them pizza.  So, I thought I would try a healthy caesar salad to offset the pizza.

So on the menu was:

Homemade Caesar Salad

For this recipe you need:

Dressing
  • 1/3 cup plain Greek yogurt
  • 1/2 tablespoon dried parmesan cheese
  • 2 teaspoons Worcestershire Sauce
  • 2 cloves garlic (chopped)
  • 1 teaspoon lemon juice
  • 1/2 teaspoon hot mustard
  • 1 tablespoon plus 1 teaspoon olive oil
  • 2-3 teaspoons water
  • 2 teaspoons balsamic vinegar
  • Salt and pepper

Salad
  • 1 romaine heart washed and chopped
  • 5 cups of croutons (see below)
  • 8 strips of cooked bacon chopped
  • 1/4 cup fresh parmesan cheese

Croutons
  • 5 cups of stale bread - cubed (I used the left over bread from last weekend)
  • 2 tablespoons garlic butter melted
  • 2 teaspoons of dried parsley

Directions:
  1.  Combine all dressing ingredients into a jar and shake well
  2. Preheat the oven to 350 °F
  3. Combine melted butter, bread cubes and parsley, mix well to cover the bread cubes
  4. Place bread cubes on a baking sheet and bake for 18 - 20 minutes or until golden brown
  5. Cool croutons
  6. Toss romaine lettuce, dressing, bacon and croutons
  7. Top with parmesan cheese and serve
Makes 4 servings.
