Rainy Sunday calls for comfort food!

Tonight we had one of Shawn's favourite dishes --- candied ham!

Candied ham with carrots & mashed potatoes

Lucky for him, I made dinner while he watched the Cowboys beat the Lions.  He is the King of the Grill, while I am the Queen of the Kitchen.

Pork Cottage Roll

Candied Ham
Prep Time: 10 mins
Cook Time: 2 hours

For this recipe you need:
  • 1 pork cottage roll
  • 1 tablespoon crushed bay leaves
  • 1 teaspoon garlic
  • 2 sprigs fresh thyme
  • 1 small onion (sliced or chunked)
  • 1/2 cup golden brown sugar
  • 1/4 cup granulated white sugar
  • 2 tablespoons coarse dijon mustard
  • 2 tablespoons mustard
  • 2 tablespoons honey
Directions:
  1. Remove pork cottage roll from the package, but keep netting on
  2. Place pork cottage roll in a large pot and fill with water so that it is covered
  3. Add crushed bay leaves, garlic, thyme and onion
  4. Boil pork cottage roll until the internal temperature reaches 160 °F
  5. Preheat oven to 400 °F
  6. Remaining ingredients in a small bowl to make a thick sauce
  7. Remove pork cottage roll from the pot and place into a baking dish, remove netting
  8. Coat pork cottage roll with candy sauce and place in the oven for approximately 15 minutes, baste occasionally
  9. Remove from oven, slice and serve immediately
Note: You can use the remaining sauce (in the bottom of the baking dish) as a gravy.

Mashed Potatoes

These are pretty self-explanatory, but I used 2 heaping tablespoons of sour cream, some table cream and butter to makes these creamy.

Carrots

These carrots are a quick and easy side dish.  I used a can of beef broth and dried parsley.  I boiled off the beef broth until the carrots were tender.









Our wine choice was the same as last night (Enzo Vincenzo Valpolicella Ripasso DOC), as we didn't over indulge and still had half a bottle left.
